Cube steak or minute steak, as some people may call it, comes from the butcher tenderizing round steak before packaging. This is done by using a butcher’s tenderizer. It does not take long to cook this time of steak hence came the name minute steak.

There are many different cube steak recipes from countries all over the world. Since the steak has been tenderized already you do not have to worry about pounding, marinating, or anything else to make your meat tender before preparing. It can be used to fry, grill, in a crockpot or broiled. Just remember not to overcook the meat. This can cause it to become tough and rubbery.

Helen's Rustic Mash Potato Recipe

This is a Rustic Mash Potato - makes enough for 4 dinner portions.

Take 6 large baked potatos

Scrub and wash well

Take a baking tray and rub lightly with butter and then put a light dusting of cracked sea salt over the whole tray

Roll the baked potatos in the tray, then place in a pre heated oven at 220 degrees

Half way through cooking roll the potatos over

They should take 1hour and 45 minutes and you should be able to put a knife easily though a potato

Once cooked take the potato out of the oven and leave to cool for 10 mins. Cut them in half and scrape the potato into a large mixing bowl

Helen's Fantastic Fishcake Recipe

Homemade Fishcakes - simple as simple gets. This makes 8 good sized fish cakes

Put 4 large baked potatos in the oven, gas mark 220. Rub sea salt into the skins and then turn the potatoes every 20 mins or so. They will take about 1 hour and 45 minutes.

When the potatos are nearly ready, get a baking tray and place foil down - leave enough so you can wrap the fish up!

Place 3 salmon fillets and 2 cod fillets onto the tray. Sqeeze a little lemon and drizzle a little white wine if you have any! Wrap the fish up and cook for 12-15 minutes or untill cooked. Please low down the oven as opposed to the top where the potatoes should be

Once cooked take the potatoes and fish out. Leave both to cool.

No fuss breakfast - recipe makes one - I would suggest 2 per serving

There are few things better than the traditional 'full english' breakfast. Sometimes, however, it is simply too much trouble. Here's a tasty alternative that will make your guests look at your culinary skills in a new light, and will involve you in minimal work, and less wahing up!

Take 1 slice of quality Ham (smoked or honey roast works best), a large egg and grated parmesan cheese

Helen's Homemade Sheperds Pie

Shepherd's pie (or 'cottage pie' it should more properly be called - real 'shepherds pie' is made with lamb!) is one of the all-time favorite 'comfort' foods. On a cold winter's night, nothing is as welcome as a big plate of well made shepherd's pie, with some crusty bread - or at least that's what we believe here at www.helensrecipes.com!. 500g Leaned Beef Mince

1 white and 1 red Onion - diced
