1. Greek Cabbage and Rice Pilaf

Ingredients

Broth or apple juice for sauteing (I used juice)
1cChoppped onions
1 1/2cExtra long grain or basmati white rice
1/2lbGreen cabbage; thinly shredded (3 cups)
2cBoiling water
1cFinely chopped fresh or canned plum tomatoes (I used 1 cup canned diced tomatoes)
1/3cDried currants or raisins (I used raisins)
1tsSalt; or to taste (I used 1/2 tsp)
1Dried oregano leaves (I used 1+ Tbsp fresh)
1/4tsGround cinnamon
1-(up to)
2tbFreshly squeezed lemon juice
2tbMinced fresh parsley

Date: Tue, 13 Aug 1996 14:33:38 -0400 This came out excellent, adapted from "Great Vegetarian Cooking Under Pressure" by Lorna Sass. Almost every recipe I've tried (sub'ing broth or apple juice for the oil) have been good, so I highly recommend this book!

Cook the onions in the broth or juice over medium high heat, stirring frequently, for 1 minute. Stir in the rice then the cabbage. Add the water, tomatoes, currants, salt, oregano, and cinnamon. Lock the lid in place. Over high heat, bring to high pressure. Lower the heat just enough to maintain high pressure and cook for 3 minutes. Allow the pressur to come down naturally for 7 minutes. Quick release any remaining pressure. Remove the lid, tilting it away from you to allow any excess steam to escape. If the rice is not quite tender, replace (but not lock) the lid and let it steam for a few more minutes in the residual heat. (I found that it took another 5 minutes or so.) Stir in the lemon juice to taste and the parsley as you fluff up the rice and thoroughly distribute all the ingredients before serving.

3. French Sponge Cookies-Diabetic

Ingredients

1/2cSIFTED CAKE FLOUR
3/4tsBAKING POWDER
1/4tsSALT
3EGGS, SEPARATED
1/2tsALMOND EXTRACT
1/4tsVANILLA EXTRACT
6tbSUGAR

Directions

Preheat OVEN TO 350 f. Sift together flour, baking powder, and salt. Beat egg yolks in a small bowl, rapidly, until very thick and lemon colored, adding almond and vanilla flavorings during the beating. With clean beaters, beat the egg whites until stiff and shiny; begin to add sugar, not more than 1 Tablespoon at a time, and beat constantly. Continue to beat rapidly until whites are very stiff and glossy. Gently fold in the beaten egg yolks. In the same manner fold in the dry ingredients until well mixed. Using a small spatula and a measuring tablespoon, measure and droop onto ungreased baking sheets, spacing 2 inches apart. Bake for 10 minutes until light and golden brown. 4. Diabetic Peanut Butter Cookies

Ingredients

1/2cPeanut butter
1/4cVegetable oil
1cBrown sugar
1tsVanilla extract
1lgEgg
1 1/2cWhole-wheat flour (or less)
2tsBaking soda

Directions

My note: tested using 1 1/4 cup all-purpose flour. YUM! These are large cookies, 2 tsp sugar per cookie.

Preheat oven to 350 F.

Cream together the peanut butter and vegetable oil in a bowl. Add brown sugar, vanilla, and egg. Beat well.

Add flour (reserve 1/4 - 1/2 cup) and baking soda. Blend thoroughly. Add enough extra flour so that you can shape dough into balls and place on an ungreased baking sheet. Can be made as 36 medium (my choice) or 48 small cookies.

Flatten with a fork, bake about 10 - 15 minutes or until lightly browned.

1/24 recipe = 96 calories, 1 starch/bread + 1 fat exchange 2 grams protein, 13 grams carbohydrate, 4 grams fat, 89 mg sodium

5. Diabetic Blueberry Muffins

Ingredients

2cBisquick
1/4cArtificial sweetener (equivalent to 6 tb sugar)
1cCommercial sour cream
1Egg
1cFresh blueberries
2tsGrated lemon peel

Directions

Preheat oven to 425 F (210 C) and grease 12-cup muffin pan. Combine Bisquick and 1/4 cup artificial sweetener. Make a well in centre of mixture and add sour cream and egg all at once. Beat with a fork until all ingredients are well combined. Gently fold in fresh blueberries. Put 1/4 cup of batter into each muffin cup. In a small bowl, combine lemon peel and 2 tablespoons artificial sweetener. 8. Sprinkle peel and sweetener mix over batter in each muffin cup. Bake on centre shelf for 20 to 25 minutes, or until golden brown. These muffins are best served hot. 6. Diabetic Washington's Cherry Pie

Ingredients

9" unbaked pie shell
2cUnsweetened cherries
1/4cSoft margarine
1tbFlour
1/2cSugar replacement
2xEgg yolks
1/4cEvaporated milk
1/2tsVanilla extract
2xEgg whites
2tsGranulated sugar replacement

Directions

Drain cherries; pout into unbaked pie shell. Cream margarine, flour, and sugar replacement. Add egg yolks and beat until smooth. Add evaporated milk and vanilla extract. Pour over cherries. Bake at 450F for 10 minutes. Reduce heat. Bake at 350F for 30 minutes. Whip egg whites until soft peaks form. Add granulated sugar replacement; whip until thick and stiff. Top pie filling with meringue, carefully sealing edges. Bake at 350F for 12-15 minutes, or until delicately brown. 1 serving (1/8 of pie) = 1 fruit, 1 fat, plus pie shell exchange calories = 88 plus pie shell calories

Diabetic Thanksgiving Cheesecake (3537)

Dissolve gelatin in 1 c warm water. Set aside to cool. Mix together 6 pkg sweet/low and graham cracker crumbs. Add melted margarine. Press 2 c of crumb mixture firml;y into 9 x 13 pan. Reserve rest for top. Cream 16 pkg sweet/low with cream cheese. Stir in prepared whipped topping. Pour mixture over crust and sprinkle with remaining cracker crumbs. Chill 3-4 hr. Also freezes well. ( 37 calories per square), Makes 36 squares.

8. Diabetic, Crunchy Chocolate Raisin Fudge

Ingredients

1/4cDiet margarine
1 1/3cNon-fat dry milk
2/3cCocoa powder
1cSugar(artificial equivalent)
1/3cEvaporated non-fat milk
2tsVanilla
1cRice Krispies
1/4cRaisins

Directions

Mix margarine and milk powder until crumbly. Add cocoa and artificial sweetener. Mix until blended. Add evaporated milk and vanilla. Mix until almost smooth and sticky. Remove from bowl and mix in Rice Krispies with hands. Continue mixing with hands until fudge is smooth and shiny. Shape into 2 10inch long rolls. Wrap in clear plastic wrap. Chill until firm. To serve, cut into 1/2 inch thick slices. Store in refrigerator. 1 serving = 1/5milk, 1/40th bread, and 1/20th fruit exchange. 30 calories.

1/4cShopped green pepper
2cCubed lean cooked ham
1cBreadcrumbs
1cGratedlow-fat process American cheese
Make white sauce of margarine, flour and milk (see below)
Stir in mustard, salt, pepper, and Worcestershire sauce
Add corn, onion, green pepper and ham
Pour mixture into nonstick casserole
Top with breadcrumbs and cheese
Bake at 375 for 25 minutes or until bubbly.

11. Diabetic Banana Pudding Splits

1pkChocolate pudding mix, low-fat(4)
2Medium bananas, peeled
1/2tsLemon juice
1/2ozPistachios,coarsely chopped

4Bing cherries, fresh*

Directions

* If bing cherries are not available, use 4 maraschino cherries. In blender,process yogurt on high speed for 30 seconds, add pudding mix and process 1 minute, scraping down sides of container as necessary. Cut each banana into 6 diagonal slices and sprinkle with lemonjuice. Arrange 2 banana quarters into each of 4 goblets or dessert dishes, top with 1/4 pudding mixture. Sprinkle each portion with 1/4 of the pistachios, then top each with 1 tablespoon whipped topping and 1 cherry.

12. Chunky Vegetarian Chili

1mdGreen pepper; chopped
1mdOnion; chopped
3clGarlic; minced
1tbCooking oil
2cnMexican stewed tomatoes, undrained (14 1/2 oz. ea.)
1cnKidney beans, rinsed drained (16 oz.)
1cnPinto beans, rinsed drained (15 oz.)
1cnWhole kernel corn, drained (11 oz.)
2 1/2cWater
1cUncooked long grained rice
1tbTo 2 Tb Chili powder
1 1/2tsGround cumin

Directions

In a Dutch oven, saute green pepper, onion and garlic in oil until tender. Stir in all remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until rice is cooked, stirring occasionally. If thinner chili is desired, add additional water. Serves 11.

Diabetic Exchanges: One serving (1 cup) equals 2 starch, 2 vegetable; also, 191 Calories, 616 mg Sodium, 0 Cholesterol, 38 gm carbohydrate, 7 gm protein, 2 gm fat.

13. Diabetic Brownies

1/2tsBaking Powder
1/2tsSalt
3ozUnsweetened Chocolate; melted
1/2cShortening; soft
2Eggs; beaten
2tbGranulated Sugar Replacement
1 1/2cFlour
1tsVanilla Extract

Directions

Combine all ingredients and beat vigorously until well blended. Spread mixture into greased 8 inch square pan. Bake at 350 for 30 to 35 minutes. Cut into 2 inch squares.

Microwave: Cook on Medium for 8 to 10 minutes, or until puffed and dry on top. Cut into 2 inch squares.

Exchange 1 brownie: 1 1/2 bread, 1 1/2 fat Calories 1 brownie: 136

14. Carrot Cake-Diabetic

1/2cGrated carrot
1 1/4cChopped dates
1cRaisins
1 1/3cWater
1/4cApplesauce,unsweetned
1tsCinnamon

Directions

Preheat oven to 350 F. Place the carrots, dates, raisins, water, applesauce, cinnamon, cloves and nutmeg in a saucepan, bring to boil, reduce the heat, and simmer for 5 minutes. Cool. Stir the dry ingredients together. Combine the wqet and dry mixtures and stir until well blended. spoon the batter into an 8x8" nonstick cake pan and bake for 45 to 50 minutes. VARIATION: You may add 1/2 cup chopped nuts to the wet ingredeints before combining with the dry. Makes 1 cake.

15. Falafel (Diabetic)

3cGarbanzo beans; cooked
1tbLemon juice
1/2cOnion; chopped
2tbFlour, whole wheat pastry
1/4cWheat germ
1/4cParsley

Directions

Heat oven to 350^F. In a food processor or blender grind garbanzo beans, lemon and onion. Remove and add flour, wheat germ, parsley, sesame seed, pepper and garlic powder. Form into 20 falafel balls. Heat oil in a large baking dish, then add falafel and bake 15 min, stirring occasionally.

1 1/4cFine crumbs(graham cracker,
1 1/2c-or Dry cereal,zwieback,etc
3tbMargarine (melted)
1tbWater
1Spices (optional)
1Sugar replacement (optional)

Directions

Combine crumbs with melted margarine and water; add spices and sugar replacement, if desired. Spread dough evenly in 8-10 inch pie pan, pressing firmly onto sides and bottom. Either chill until set, or bake at 325F for 8-10 minutes.

Directions

In the top of a double boiler, melt coating over hot, noit boiling, water. Add cereal and seeds. Blend together thoroughly, then pour onto waxed paper and spread thinly. Let stand until firm. Break into pieces.

Milkcote or whitecoat chocolate

Directions

Cream the cream cheese and add pecans. Chill until cheese will form balls. Dip balls into melted whitecote or milkcote chocolate coating. Makes about 25 balls.

Sift flour and salt together; set aside. Beat eggs and skim milk; add to flour. Beat until smooth and creamy. Pour into heated greased muffin tins, filling half full or less. 20. Diabetic Apple Cake

Ingredients

2 1/2cFlour;
3tsSoda;
2tsCinamon
1/2tsNutmeg;
1tsSalt;
1cButter;

Directions

Mix dry ingredients; add butter, eggs, sugar substitute, and blend well. Stir in grated apples and nuts. Bake in well-greased 9 x 13 pan at 375 degrees, 40-50 minutes.

21. Baked Custard (Diabetic)

2 1/2cLow fat milk
1/4tsSalt
3Eggs
3tbGranulated sugar replacement
1tsVanilla nutmeg

Directions

Combine milk, sugar replacement, salt, vanilla and eggs in large bowl. Beat to blend well. Pour into six 1/2 cup individual baking dishes; sprinkle with nutmeg. Set cups in large baking pan. Add 1 inch of water to pan. Bake custard at 350 degrees for 45 min. or until knife inserted in center comes out clean.

22. Diabetic Citrus Ice

Ingredients

1/4cGranulated sugar replacement
1cEa unsweetened orange &
Grapefruit juices
1cWater
1Env unflavored gelatin
1/4cLemon juice

Directions

Combine sugar replacement,water & gelatin in a saucepan.Bring to a boil, reduce heat and simmer for 5 minutes. Cool slightly and then add in the juices. Transfer to freezer trays and freeze until mushy. Scrape into mixing bowl and beat until just loosened. Return to freezer tray.

23. Diabetic Gyros

Ingredients

2lbGround beef or lamb or both
4Green onion; finely chopped
1cGarlic; minced
1tsOregano
1/4tsCumin
1/4tsParsley

1/4tsPepper; freshly ground

1cYogurt
1tbMayonnaise
1Lemon; juice of
2Scallions; including green tops, finely chopped
Cucumber; minced
5Cloves garlic; minced

Directions

Mix all ingredients except pita, mixing well and kneading until mixture is stiff. On skewer pack meat mixture about 5" long and not more than 2" in diameter. Put as many "fingers" as possible on a skewer leaving a 1" space in between. Cook over hot coals 10-15 minutes, turning frequently. Take pita and slide gyro into center. Drizzle with sauce. Fold over to eat.

Sauce: Mix well.

Ingredients

6cWater
2cTomato juice;
1cPotato; peeled chopped
1cOnion; chopped
1cLima beans;
3/4cChicken; chopped cooked
1/2cCarrots; sliced
1/2cCelery; chopped
2tbChicken bouillon granules; flavored
1tsGarlic powder;
1 1/2tsWorcestershire sauce;

Directions

Combine all ingredients in a large Dutch oven. Cover and bring to a boil. Reduce heat and simmer 45 minutes to 1 hour. Serve hot. Food Exchange per serving: 1 STARCH EXCHANGE PER SERVING: CAL: 84; CHO: 6mg; CAR: 15gm; PRO: 4gm; FAT: 1gm; SOD: 250mg;

25. Apple Cinnamon Muffins

Ingredients

1 1/4cOat bran cereal; uncooked
1cWhole wheat flour
2tsGround cinnamon
1tsBaking powder
3/4tsBaking soda
1/2tsSalt
3/4cUnsweetened applesauce
1cApple; peel core and dice
1/2cHoney
1/2cVegetable oil
1Egg
1tsPure vanilla extract

Directions

1.Preheat oven to 375F.

2.Coat 12 medium-size cups with vegetables oil or line with paper baking cups.

3.In a medium bowl combine oat bran cereal, flour, cinnamon, baking powder, soda, and salt.

4.In large bowl combine applesauce, honey, oil, egg, and vanilla. Stir in dry ingredients; mix well. Stir in apple.

5.Fill prepared muffin cup almost full. Bake 15-20 minutes or until golden brown. Serve warm.

26. Diabetic Cake

Ingredients

1cWater
2Jumbo Eggs
1cRaisins
Artificial sweetener to = 1 C. sugar
1cUnsweetened Applesauce
3/4cOil
1tsBaking Soda
1/4tsCinnamon
1/2tsNutmeg
1tsVanilla
1/2tsSalt
1 1/2cFlour

Directions

Cook raisins till soft. Drain water, + raisins to applesauce & eggs, sweetener, cooking oil. Mix well, blend baking soda flour + remaining ingredients. Bake 350 Degrees in 8" x 8" or 9" x 9" pan.

27. Diabetic Orange Sunbeams

Ingredients

1 1/2cFlour
1tsBaking powder
1/4tsSalt
1/2cShortening
1/2cRaisins
1Egg
2tbOrange juice
2tbGrated orange rind
1 1/2tsSucaryl

Directions

Sift together flour, baking powder and salt. Cut in shortening until crumbly.

Add all at once; raisins, eggs, orange juice, orange rind and sucaryl.

Mix well. Make into small balls; flatten on cookie sheet. Bake 12 to 15 minutes at 375 degrees.

1tbButter
1/2cButtermilk/sour cream
2cFlour

1tbVanilla

Directions

Cream shortening, egg, sugar substitute and butter; add buttermilk and mix in flour and baking soda, apple, salt, cinnamon, nutmeg, soda, cloves and vanilla. Drop on greased cookie sheet. Bake 7-8 minutes at 375 degrees.

Directions

Combine ingredients and mix well Return to container and refrigerate except when it is being used. 1 tsp/serving.

For spiced cranberry sauce,

Cook cranberries in boiling water until skins are broken. Then ADD the remaining ingredients. Then CHILL in refrigerator.

Combine all ingredients in a mixing bowl. Pour into a casserole dish coated with nonstick vegetable spray. Bake in preheated 350 degrees oven for 15-20 minutes. Serves 6.

combine carrots, pineapple, and raisins; mix well. Chill for 2-3 hours, stir in yogurt, and serve on a lettuce leaf, if desired. Yield 7 servings.
