Ingredients

1 1/2lbBoneless chuck steak, 1 1/2 inch thick
1Clove garlic, peeled and minced
1/4cWine vinegar
1tbBrown sugar
1tsPaprika
2tbWorcestershire sauce
1/2cCatsup (ketchup)
1tsSalt
1tsDry or prepared mustard
1/4tsBlack pepper

Directions

Replace Chuck Steak with Beans

Cut the beef on a diagonal, across the grain into slices 1 inch wide. Place these in the crockpot. In a small bowl, combine the remaining ingredients. Pour over the meat, and mix. Cover and cook on Low for 3 to 5 hours. Shared by Maggie Workman Source: The Best of Electric Crockery Cooking

2. Crockpot Sweet and Sour Chicken

Ingredients

1Carrot; cut in pieces
1Green pepper; cut in pieces
1Med Onion; quartered
4Boneless chicken breasts; *
3tbInstant tapioca; (heaping)
8ozPineapple chunks; canned, **
2tbCandied ginger; or fresh,***
1/3cDark brown sugar; packed
1/3cRed wine vinegar
1tbSoy sauce
1tsInstant Chicken bouillon
1/2tsGarlic powder
1Med Green pepper; strips
10Fresh cilantro leaves; opt.
Rice; hot, cooked

Directions

*Remove all skin and any fat from chicken before cooking. ** DO NOT DRAIN the pineapple, include the juice in the crockpot. ***Mince the ginger if using fresh ginger. For crockpot cooking -Put vegs. in bottom of crockpot. Sprinkle tapioca over vegetables. Place chicken atop vegetables. Combine all other ingreds. except rice in a small bowl. Pour over chicken. Cover crockpot and turn to low and cook for 8-10 hours. Before serving make rice. Serve over rice. Leftovers can be reheated in microwave. To cook in oven: Put vegetables in bottom of a greased pan. Sprinkle vegs. with tapioca. Add chicken to pan. Combine all other ingreds. except rice in a small bowl. Pour over chicken. Cover pan tightly with foil. Bake in 300 deg. oven for 2 hours. Directions

Mix all together and put into a crockpot. Cook on low for 4-6 hours. Or until chicken is tender. (I cooked mine longer since I wasn't home) Serve over cooked noodles or rice. I served this over rice and this is very filling and delicious.

4. Crockpot Apple Butter To Can

7cApplesauce; unsweetened
2cApple cider
1 1/2cHoney
1tsGround cinnamon; or more
1/2tsGround cloves
1/2tsAllspice

Directions

In a crockpot, mix all ingredients. Cover and cook on low heat for 14 to 15 hrs., or until the mixture is deep brown. Pack while hot into 4 hot pint jars. Process in hot water bath for 10 mins., counting the time after the jars have been immersed and the water comes again to a rolling boil. 2lbGround beef
1lbItalian sausage
1 1/2cSour cream
1cnFried onions; 2.8 oz
2Eggs
1pkOnion soup mix; 1 oz.
1cParmesan cheese
2cnCream of mushroom soup
1lbShredded mozzarella cheese

Directions

Mix first 8 ingredients together. Form into Balls. Place on a cookie sheet. Bake at 375 degrees until firm, about 20 minutes. Place meatballs in crockpot. Top with soup and cheese. 6. Crockpot Stroganoff

Ingredients

1 1/2lbGround beef
1 1/2Onions; sliced
1Cloves garlic; minced
2tbFlour
Salt and pepper
1/4tsPaprika
1cnCream of celery or mushroom
1cSour cream

Directions

Brown ground beef; drain fat. Add onions and garlic. Stir until wilted. Add flour, salt, pepper and paprika. Mixing well. Stir in undiluted soup; mix well. Put all in crockpot on low for 6 hours. When you get ready to serve add sliced mushrooms and sour cream. Serve over noodles rice or potatoes.



7. Crockpot Favorite Brisket

Ingredients

4lbFresh beef brisket
2tsSalt
2tsDry mustard
2tsPaprika
1/8tsPepper
1/2tsGarlic powder

Directions

Trim all excess fat from brisket. Combine seasonings unti well blended; rub into brisket. Place meat in crockpot with fat side up, cutting to fit if necessary. Cover and cook on low setting for 8 to 12 hours. Remove brisket from liquid and cut across the grain into thin slices. Serve au jus. 8. Crockpot Beef Stroganoff

Directions

Cube round steak. Put steak in crockpot with remaining ingredients. Salt and pepper to taste. Cook on high 1 hour then low 4 to 6 hours. Serve with noodles, rice or mashed potatoes.

1Small box elbow macaroni
3cCheddar cheese, shredded
1cnEvaporated milk
1 1/2cHomogenized milk
3Eggs
1/2Stick butter

Directions

Cook Macaroni according to directions on box. Grease crock pot with butter. Mix all ingredients in crockpot, cook on high for 30 minutes then turn on low and cook for 2 hours.

10. Crockpot Lemon-Garlic Chicken

Ingredients

3lbChicken
1/2cLemon juice
1/2cGarlic cloves; crushed
1tsSeasoned salt
1tsPoultry seasoning
2dsTabasco
1cWhite wine

Directions

Skin and cut up chicken. Combine with other ingredients in crockpot. Set on low. Upon return from work, debone chicken. Serve over rice. If you freeze chicken pieces separately, and mix up other ingredients the night before, you can dump it all together quickly in the morning. And if you start with frozen chicken it doesn't fall apart.



11. Crockpot Pork Roast

Soup Mix"
1Env Water
lgPinch garlic powder

Directions

Place the roast in your crockpot. Pour in soup, water and garlic powder. Cook all day on low. Thicken juice to make gravy and serve over potatoes, rice or noodles.

12. Crockpot Chicken Soup

Directions

Place ingredients 1 through 6 in the crockpot and cook all day on low to medium. 1/2 hour to 1 hr before serving; add milk and flour mixture. After the soup starts to thicken, it is ready to serve.

1/2Soup can water
1/2cChopped onions
1tsPaprika
1tsLemon juice

Non-stick cooking spray

Directions

Spray crockpot with non-stick cooking spray. Place chicken in crockpot. Mix remaining ingredients together and pour over chicken. Cover and cook on low 6-8 hours. 1 hour before serving, prepare chive dumplings: Mix dry ingredients and shortening. Add chives and milk, combine well. Drop by teaspoonsful onto hot chicken and gravy. Cover and cook on high for 45-60 minutes. Serve with mashed potatoes and vegetables, or over hot, cooked noodles. Recipe by: Kathy Reckner

Wash peppers and halve lengthwise, cleaning out seeds, and set aside. Combine ground beef, breadcrumbs, egg, seasonings and milk into a meatloaf-like mixture. Pack into pepper halves. Place in crockpot, stacking peppers in layers. Pour spaghetti sauce over top. Cook in crockpot on high four four hours, or on low from 6 to 8 hours. Serves 6-8.

Directions

Brown beef, drain fat & put in crockpot. Add rest of ingredients, except kidney beans. Cook on low 8-10 hours or on high for 5-6 hours. Stir occasionally. Add beans about 1 1/2 hours before you serve.

18. Crockpot Chicken and Vegies

Ingredients

2Frozen skinless boneless chicken breasts
1pkFrozen mixed vegies (I used Veg-all stew cut vegetables because they are in big chunks)
1cnCream of whatever, celery, mushroom, chicken, etc (reduced fat of course!)
Yolkless wide noodles or rice

Directions

Take 2 frozen skinless boneless chicken breasts (this is if I use my little crockette-about 1 quart) and put in the crockpot. Add a bag of frozen mixed vegies (I used Veg-all stew cut vegetables because they are in big chunks). Pour a can of cream of whatever, celery, mushroom, chicken, etc (reduced fat of course!) over chick and vegies. Put on the lid and turn on/plug in the crockette. Go to work. Come home. Either put some yolkless wide noodles or rice on the stove and go relax for a little bit. Dinner will be ready shortly.

***NOTE: if you use a big crockpot, you will need to adjust the ingredients accordingly. A green salad would be nice with this dish. Posted to Digest eat-lf.v096.n206

19. Crockpot Granny Jean's Lima Bean Casserole

Ingredients

1lbDry lima beans
3tsSalt
1tbMolasses
1/2cButter
3/4cPacked brown sugar
1tbDry mustard
1/2cSour cream

Directions

Cover beans with water and 1 ts salt, soak overnight. Drain, refill pot with water to cover beans, bring to boil and simmer till soft. Drain. In crockpot, mix beans and butter. Mix together sugar, salt, mustard. Sprinkle on beans. Stir molasses and sour cream together, pour over eans and mix all together. Cover and cook in crockpot on low for 4 to 6 hours.

1Stalk of celery, finely cho

Directions

In crockpot, sprinkle beef with dry onion soup mix. Pour hot water over meat. Stir in carrots, celery and tomato. Cover and cook on low 4-6 hours or until meat is tender. Turn control to high. In a small bowl, combine biscuit mix with parsley. Stir in milk with fork until mixture is moistened. Drop dumpling mixture into crockpot with a teaspoon.Cover and cook on high for 30 minutes. 22. Crockpot Chicken and Artichoke Casserole

3lb(approx.) boiler-fryer; cut up salt; to taste
1/2tsWhite pepper
1/2tsPaprika
1tbButter/margarine
1/2cRich chicken broth
3tbSherry
1/2tsDried tarragon
1cnMushrooms
2tb(heaping) quick-cooking tapioca
2Jars marinated artichoke hearts; reserve 1 T. of the marinade

Directions

Wash chicken. Pat dry with paper towels. Season with salt, white pepper, and paprika. Using a large frying pan, brown chicken in 1 T. butter. Place mushrooms and drained artichoke hearts in bottom of crockpot. Sprinkle with quick-cooking tapioca. Add the browned chicken pieces. Pour in broth and sherry. Add tarragon. Cover crockpot and turn to Low heat setting. Cook for 7-8 hours. OR cook on High for 5 hours. If you don't want to brown the chicken first, it's o.k.

Directions

Cut bacon in 1 inch squares, fry with chopped onion till crisp. Drain off fat. Put bacon, onion, and all other ingredients into a crockpot and cook on low for eight hours.

1pkFrozen mixed vegetables; (10 oz.)
3Stalks celery; chopped

1lbGround beef or cubed chuck roast; browned and drained
11 lb. can tomatoes
2tbBeef base; granules or paste (2 to 4)
1/2tsPepper
1Stick butter
1/2cFlour

Directions

Put all ingredients in crockpot EXCEPT for butter and flour. Cover and cook on Low for 8 to 10 hours. One hour before serving, turn on High. Make a roux of 1 stick butter and 1/2 c. flour (melt butter in small saucepan, on med-low heat, and stir in flour); stir until smooth. Pour into crockpot and stir into soup. Cook soup on High until thickened.

26. Creamy Two Potato Crockpot Soup

Ingredients

4mdSweet potatoes; diced
2mdRed potatoes; diced
1lgOnion; diced
4mdCarrots; diced
6Cloves garlic; minced
Salt; to taste
Fresh ground pepper; to taste
49 12z Chicken stock
8ozVelveeta cheese
1/2cCream

Directions

In a 5 quart crockpot, combine potatoes, onion, carrots, garlic, salt, pepper and stock. Cook on low 10 to 12 hours. During the last 10 minutes of cooking time, stir in velveeta until melted, stir in cream and turn off crockpot. Cover and let sit until serving time. Makes 8 to 10 servings. 27. Crockpot Rice Pudding

Yield: 1 Servings

Ingredients

1cWhite rice; (arborio rice is especially good, but any will do)
6cWhole milk; (or 5 cups skim, 1 cup cream; I use 4 cups whole milk and 2 cups coconut milk)
3/4cSugar
A couple of cinnamon sticks; (or 12-15 cardamom pods)
You can also add things like shredded coconut; raisins, pine nuts, unsalted pistachios, whatever!

Directions

Add these all to the crockpot and cook for 2 hours or until rice is tender. You should stir it occasionally and keep an eye on the pot so that it doesn't bubble up towards the end of its cooking time. Other than that it is foolproof!

Add a teaspoon of vanilla extract when you turn off the heat.

Date: Fri, 12 Jul 1996 18:26:14 EDT Combine flour, mustard, salt, and pepper. With a meat mallet, pound this into the stak pieces. Heat margerine and oil in skillet. Brown the steak pieces, then transfer to the crockpot.

In pan drippings, saute' onion, celery, and carrots until glazed. Add remaining ingredients. Heat, scraping up browned particles. Pour contents of skillet into the crockpot over the meat.

Cook on low for 6-8 hours...longer, if necessary. Sprinkle with parsley before serving.

***Mashed potatoes is a MUST with this dish...

The meat gets really tender in the crockpot. The leftovers reheat well in the microwave (TeAntae, this would be good to take to work with you....)

35. Crockpot Rice Pudding with Fruit

Recipe by: Jo Anne Merrill Preparation Time: 3:00 * Use half nonfat and half whole milk, or all nonfat for lower fat content.

Substitute canned milk for the regular milk for a very rich flavor. The cooking time will vary greatly, anywhere from 1-1/2 to 3-1/2 hours. The longer it cooks the thicker it will be. It is important to have the dried apricots minced. Put all ingredients into crockpot. Stir to blend well. Cover and cook on high 1- 1/2 hours, stir once after about 1 hour. Or, cook on high for the first 30 minutes, turn to low and cook as long as you desire. Check after the first 2 hours of low cooking and stir. If rice is not absorbing the milk quickly enough, turn the crockpot up to high again. Keep cover on at all times.

Crockpot temperatures vary widely among different brands. Only experimentation can tell you the correct amount of time for cooking in your crockpot. Rarely will a crockpot recipe fail, though, as the long, slow cooking process does not require precise timing.

Brown ground beef, drain fat; put in crockpot. Cook macaroni according to package directions till barely tender, drain well. (I find that cooking slightly less than half the time given works OK). 39. Crockpot Wine Chicken with Noodles

Ingredients

6Pieces chicken, boneless and skinless
1cnMushroom soup, undiluted
1/3Soup can dry white wine
Salt and pepper, to taste
1cn(4 oz) mushroom pieces, drained
1Bag (8 oz) egg noodles
Butter and parsley

Directions

In crockpot, place chicken pieces. Salt and pepper, to taste. Sprinkle the mushroom pieces over the top of the chicken. Mix together mushroom soup and white wine. Cover, and cook on low for 6-8 hours, longer if necessary.

When ready to serve, cook noodles according to package directions until just tender. drain, and toss with butter and parsley.

Place noodles on a warm platter (a large one). Top with chicken pieces and juices from the crockpot. Serve.

45. Crockpot Grains, Etc

16ozTomatoes, canned (reserve liquid), drained and chopped

Directions

Combine all ingredients in a crockpot, putting grains in last. Add water to reserved tomato liquid to equal 2 1/2 cups. Stir into crockpot.

Cover and cook on LOW for 8 hours.

Stir well before serving.

NOTES : Add 4 ounce can of diced green chili to add more zip.

Directions

In large skillet, brown onion in butter and oil until just tender. Then brown chicken and place all in large crockpot. Add remaining ingredients except heavy cream, flour and biscuits. Cook on high for 3 hours or 5-7 hours on low. When chicken is done, remove pieces to plate let cool, then debone. While chicken is cooling, mix flour and cream together, then stir into crockpot. (Crockpot needs to now be on high) Drop pieces of biscuit int crockpot and turn on high. Cook about 30 minutes, until they are firm. Return chicken meat to crockpot and serve.

Whisk together soup and milk. Pour over ingredients in crockpot. Cook on low for about 6 hours, stirring occasionally if convenient.
