Root Beer Recipes
Yield: 8 Servings
Ingredients

| 8 | lb | Smoked ham |
| 12 | oz | Shiner Bock Beer |
| 8 | l | Barq's Rootbeer |
| 1 | lg | Yellow onion; sliced |
| 2 | lg | Navel oranges; sliced |
| 2 | lg | Limes; sliced |
| 1 | tb | Whole cloves |
| 3 | | Dried chipotle pepper; crushed |
DirectionsIn a large pot big enough for the ham, place the sliced onions & ham. Squeeze the sliced orange & lime rings over the ham & drop into pot. Add cloves & chipotle peppers, pour in the beer & enough rootbeer to cover ham, using remainder if needed to keep the ham submerged. Bring to a boil. Reduce heat to a simmer. Cover & let simmer for about 2 1/2 to 3 hours. Remove ham to a platter to cool. Turn heat to medium high & let boil until reduced by half. Place 3 - 4 layers of cheese cloth in a sieve & strain the rootbeer mixture, degrease & return to pot. Return to a boil & let boil until the mixture gets syrupy. While the rootbeer mixture is boiling you can slice the ham & place in a pyrex baking dish in a single layer. When the rootbeer mixture is the consistency of syrup pour some of the mixture over the ham & place in a 350F degree oven for about 15 minutes or until warmed through. Put some of the "gravy" in a gravy boat and pass around with the ham.
NOTES : Plan on freezing some of the Rootbeer mixture(gravy). The amount of "gravy" will be a lot more than you will need with the meal. I served baked sweet potatoes with this & the "gravy" was excellent used on them. I plan to use some of the gravy over ham slices served with waffles for breakfast some morning. The chipotles were an addition you can consider Optional. I added them because I'm a Chile-Head & just cant cook without some kind of chile's, they didn't add much heat but did add to the smoky flavor of the ham. I also passed around chipotles in adobo sauce which I pureed, it added a nice "Glow" to the Ham & Gravy. Recipe by: Christopher E. Eaves

2. Chuck's Homemade Ozark Rootbeertag: rootbeer

| 10 | oz | Root beer extract |
| 1 | lb | Honey |
| 1 | c | Blackstrap molasses |
| 1 | c | Grade B maple syrup |
| 1 | ga | Sugar (about 8 pounds) |
DirectionsThis recipe makes 15 gallons. Mix all ingredients in a standard keg. Add water to fill keg. Carbonate. Drink. I thought the molasses taste was a bit harsh and will try either regular molasses, or use less. I will also try substituting 2 ounces of sarsaparilla extract for 2 ounces of the rootbeer extract. This recipe makes a strong tasting rootbeer with about half the sweetness of commercial rootbeers. This was made with artificial carbonation, but it could be adapted to make alcoholic rootbeer by substituting malt extract for some of the sugar.

DirectionsMix all ingredients in a keg, add water to fill keg, carbonate, drink. Some comments regarding the recipe:
I thought the molasses taste was a bit harsh, I will try regular molasses next time and perhaps use a little less as well.
I will try substituting 2 oz of sasparilla extract for 2 oz of the rootbeer extract.
In any case, you can mix the ingredients to your taste.
This recipe produces a strong tasting rootbeer with about half the sweetness of most commercial rootbeers (warning: you will want to clean your draft lines after dispensing this root beer, it leaves a flavor behind). It was extremely popular with the underage college crowd because the rootbeer was served just like draft beer.
You can obtain the extracts in 2 oz bottles at most homebrewing shops. In addition, you can buy bulk extracts through restaurant suppliers, the one brand I know of is 'Universal'.
While I artifically carbonated my rootbeer (for both legal & practical reasons) you could ferment it to get carbonation. There was an alcoholic rootbeer at the Great American Beer Festival, I talked with the brewmaster who made it, and it is similar to my recipe, but with the addition of a substantial amount of malt extract to increase the fermentables. His rootbeer was in the 6% alcohol by weight range, and tasted very good on it's own, but didn't go well with drinking lots of regular beer.

The root beer you'll make here is a simplified version of Roy Allen's method from the early 1900's. Instead of harvesting roots, herbs, and berries, you have the luxury of using a root beer concentrate that can be found in most grocery stores. In 1922 Allen expanded his business, he formed a partnership with entrepreneur Frank Wright. This led to the name that would become famous, A&W, the country's best-selling root beer.
