Harvest Apple Pie With Cheddar Crust

by News Canada

(NC)–Apples partner well with cheddar and here the cheese is built right into the crust. For another variation, use your favourite crust recipe and top with apple crisp topping.

Cheddar Crust

2 1/4 cups all-purpose flour 550mL

3/4 tsp salt 4 mL

1/2 cup vegetable shortening125mL

1/4 cup cold butter 50mL

(cut into small pieces)

1 3/4 cups old cheddar cheese 425mL

5 to 6 tbsp ice water 75 to 90 mL

Apple Filling:

6 cups Ontario Apples 1.5 L

sliced peeled (Such as Cortland, Crispin (Mutsu), Golden Delicious, Jonagold, McIntosh, Northern Spy, Russet, Spartan)

1 tbsp lemon juice 15mL

1/3 cup granulated sugar 75mL

1 tbsp all-purpose flour 15mL

1/2 tsp cinnamon 2mL

1 egg yolk 1

1 tsp milk 5mL

• In large bowl, combine flour and salt. With pastry blender, cut in shortening and butter until mixture resembles fine crumbs. Stir in cheese. Stir in water a little at a time until dough holds together. Press into 2 round disks; wrap with plastic wrap and chill 30 minutes.

• Meanwhile prepare filling: In large bowl toss apples and lemon juice. In small bowl, combine sugar, flour and cinnamon; stir into apples.

• On lightly floured surface, roll out pastry for bottom crust to 1/8-inch (3mm) thickness. Place in 9-inch (23cm) pie plate; trim edge even with rim. Roll out pastry for top crust, cutting steam vents. Add filling to bottom crust, place top crust over apples, trimming to 1/2-inch (1 cm) over the edge. Tuck overhang under edge of bottom crust and finish edge as desired. In small bowl, beat together egg yolk and milk; brush top of pie with mixture.

• Bake on bottom rack in a 425ºF (220ºC) oven for 15 minutes then reduce temperature to 350ºF (180ºC) and bake for about 40 minutes or until apples are tender and crust is golden brown. Makes 6 servings.

Cool Snacks for a Hot Summer

by Deborah Shelton

Beat the heat with these cool summer treats!

Mouse Popsicles

It’s not what you’re thinking! The name refers to the size of the popsicle—not the contents. Wash a bowl of seedless grapes, and then set the grapes in the freezer for about an hour. Poke colored toothpicks into the grapes to serve.

Juice Pops

Summer isn’t complete without homemade juice popsicles. Simply fill a popsicle mold or an ice tray with your favorite fruit juice. Cover the ice tray with clear plastic wrap and poke a toothpick through the plastic into each square. Place the tray into the freezer until the popsicles are frozen solid.

Cube Steak Recipes

by Hans Dekker

Are you searching for some new and exciting cube steak recipes? Well, first let’s look at why cube steak is so popular. Cube steak or minute steak, as some people may call it, comes from the butcher tenderizing round steak before packaging. This is done by using a butcher’s tenderizer. It does not take long to cook this time of steak hence came the name minute steak.

There are many different cube steak recipes from countries all over the world. Since the steak has been tenderized already you do not have to worry about pounding, marinating, or anything else to make your meat tender before preparing. It can be used to fry, grill, in a crockpot or broiled. Just remember not to overcook the meat. This can cause it to become tough and rubbery.

Meal Planning Help: Meal One

by Monica Resinger

It's nice when I find a meal where the foods compliment each other because it simplifies my life by knowing what to serve with what. Of course I don't have to stick to any one meal plan; I can mix and match the main dishes and sides, but a lot of the time I'm in a hurry and don't have a lot of time to think about it. I already have quite a few meals like this up my sleeve, but when I find a NEW one to add to my collection I get happy because it adds a little more variety to our meal choices.

I'd like to share some of my new and old meal plans with you in hopes of helping you with the question `what do I make for dinner'. Here's a meal that we have tried lately where the foods complimented each other really well. The food items aren't necessar Meal Planning Help: Meal One Recipe
