Quick and Easy Breakfast Solutions

(NC)-Looking for a fresh, new way to start the day? Think outside the breadbox…and beyond! Darlene Gingrich, Thomas' Break-xpert provides the following 'menu' of mouth-watering morning solutions that include much more than just jams and syrup:

  • Calling all cheese-lovers! Top an English Muffin with a slice of your favourite cheese, add a slice of ham or bacon and toast open-faced under the broiler until the cheese starts to melt. Gooey and good!

  • Your own egg and muffin creation. Poached or scrambled eggs take just seconds in the microwave and make the perfect partner to an English Muffin. Include a spoonful of salsa to add a zesty twist!

  • Gourmet on the go. Package one or two Fresh Waffles in plastic sandwich bags and your favourite fruit topping in a reusable sealed container. Toast the waffle once you get to work, top it off with your assortment of fruit and enjoy decadence at your desk. Add a spoonful of fruit yogurt for a breakfast parfait!

  • Brie? Mais oui! Add sliced pears and Brie cheese to a toasted Fresh Waffle for an alternative to syrup.

  • Brown Betty made easy. Microwave sliced apples with brown sugar and a dab of butter until warm. Serve over a hot fresh waffle.

  • Pizza for breakfast! Who says you should only eat it at lunch? Top an English Muffin with tomato sauce and all of your favourite toppings. Quick, easy and nutritious, and fun for the kids to help.

Parmesan Crusted Sole with Lemon Beurre Blanc

Sole/flounder is a refreshing sweet and mild flavored fish which allows it to be used in a variety of ways. With its long thin flesh, sole is often stuffed or used in other extravagant plate presentations. Because this fish is very thin it’s a great choice to pan fry for a quick meal. Parmesan crusted sole is the best of both worlds, it’s eloquent and fast. You can make it look even better with some fresh chives, tarragon or basil. Even if you don’t like fish, you’ll love this recipe.

Serves 4 4 ea. Sole fillet (6-8 oz) – if the fillets are small use 2 per serving 1 ½ cups Panko (Japanese bread crumbs) ½ cup Grated parmesan cheese 4 Tbsp. Parsley - minced ½ tsp. Granulated garlic ¼ tsp. Kosher salt ½ tsp Parmesan Crusted Sole with Lemon Beurre Blanc Recipe

Even if you have never baked bread before, I can just about guarantee that your very first loaf out of the oven will be so mouth-watering that you’ll amaze yourself (not to mention family and friends)!

Up until 1990, I’d never made a single thing that called for yeast. In fact, if a recipe did include yeast, I avoided it LIKE THE PLAGUE! I’ve never been a “Donna Reed” homemaker and I’ve been told that I don’t “cook,” I merely “prepare” things to eat. So, when an unusual gift of a cup of Sourdough Starter came my way, I was at a total loss. However, the friend who shared the starter with me had a delightfully documented family history about the origins of the starter and how her family had “kept it alive” down through seven generations. Harvest Sweet Potato Pie

Pastry:

1 1/2 cups (375 ml) Five Roses All Purpose Flour

1/2 tsp (2 ml) salt

1/2 cup (125 ml) cold butter, cubed

1 egg

1 tsp (5 ml) white vinegar

cold water

Filling:

2 eggs

1 1/2 cups (375 ml) cooked, mashed sweet potato

1 1/4 cups (300 ml) coffee cream or milk

3/4 cup (175 ml) packed brown sugar

1 tsp (5 ml) cinnamon

1 tsp (5 ml) each salt and ginger

1/4 tsp (1 ml) each allspice, cloves and nutmeg

Pastry: Combine flour and salt in food processor, fitted with metal blade. Using pulse button, cut in butter until mixture resembles coarse crumbs. Beat egg and vinegar in measuring cup; add enough cold water to measure 1/3 cup (75 ml). Add to flour mixture and process until dough begins to clump Harvest Sweet Potato Pie Recipe
