Peach Crab Stacks with Wasabi Remoulade Sauce by News Canada (NC)-An elegant appetizer or first course that keeps on giving! Flavorful and colorful, these crab stacks are as attractive as they are nutritious. Made with antioxidant-rich peaches from California, they are the perfect beginning to a healthy summer meal. Antioxidants are critical to maintaining healthy skin and counteracting the damaging effects of the sun's ultraviolet rays, so be sure to serve these appetizers early and often.
1/3 cup plus 2 tablespoons mayonnaise (homemade or reduced fat if desired)
1-3/4 teaspoons wasabi powder mixed with 1-1/4 teaspoons water to form paste
6 ounces lump crabmeat, picked over to remove cartilage
1 small green bell pepper, seeds and ribs removed, cut into 1/4" dice
2 tablespoons Decanting is a strange word to many people. Some do not even know what it means exactly. Taking the sophistication out of it, decanting literally means pouring the wine from the bottle to a special glass container. This is done in order to expose the wine to oxygen and enrich it. What is the meaning of this process? Do all wines benefit from decanting or not? The wine experts are not in agreement. Some say wine should be decanted in order to allow it to “breathe” and develop fully before consumption. Others claim decanting does not contribute to the quality of the wine. So who is right? Well, the truth is somewhere in the middle. Decanting does seem to benefit certain wines more than others. Most red wines, except for the very aged and some 1-1/2 cups (375 mL) cut-up, frozen tropical fruit (peaches, cantaloupe, kiwifruit, pineapple, mangos)* 2 cups (500 mL) Ocean Spray® Cranberry Cocktail Combine ingredients in a blender container. Cover and blend at high speed until smoothly combined. Makes 2 servings. For an adult version add coconut or golden rum to taste. * Or freeze any combination of cut-up fruit (strawberries, bananas, apples, pears, etc). - News Canada
