Cherry-Coconut Bars

4 cups Holiday Cookie Mix -- (see recipe)
1/2 cup margarine or butter (1 stick) -- softened
1 1/2 cups sugar
3/4 cup flaked coconut
1/3 cup all-purpose flour
3/4 cup chopped maraschino cherries -- drained
1 teaspoon vanilla
3/4 teaspoon baking powder
1/2 teaspoon salt
3 eggs -- beaten
1 cup chopped nuts

Heat oven to 350º. Mix Holiday Cookie Mix and margarine. Press in ungreased rectangular pan, 13 × 9 × 2 inches. Bake 25 minutes.

Mix remaining ingredients except nuts; spread over baked layer. Sprinkle with nuts.

Bake about 25 minutes or until center is set. Cool completely. Cut into about 2 × 1-inch bars.

We low carbers tend to think that Mexican food is “off limits”... NOT! This girl lives in California and I have some awesome recipes from friends for some Mexican food that is “music for your mouth”... not to mention your tummy!

CHICKEN ENCHILADAS

Before you start to build the enchiladas... whip out that Girl Scout motto and “be prepared”! You can fix this stuff a couple of days in advance and then “whip it together” for your guests or for a quick supper after a day of Christmas shopping.

Okie dokie... prepare the Chile Sauce recipe below and refrigerate so it READY. Also, cook the chicken and “chop it”!
