KFC Wings

6-8 cups shortening
20 chicken wing pieces
1 egg, beaten
1 cup milk
2 cups all-purpose flour
2 1/2 teaspoons salt
3/4 teaspoon pepper
3/4 teaspoon MSG
1/8 teaspoon Paprika
1/8 teaspoon Garlic Powder

If you are using frozen wings allow them to defrost and marinate. If you are using fresh wings you are going to want to take the wing and remove the flipper and then break them into two pieces and then marinate them. Combine the beaten egg with the milk in a small bowl. In another small bowl, combine the flour, salt, pepper, garlic powder, paprika and MSG. When shortening is hot, dip each wing first in the flour mixture, then into the milk and egg mixture, and back into the flour. Bread all the wings then refrigerate them until ready to use. When they are ready to be used fry them 6 at a time for 12 minutes. Remove from the shortening and allow them to drain for 3 minutes. For the barbecue ones dip in the barbecue sauce and serve.

CONSUMER ALERT: do not mix your food container lids. A yogurt container lid is NOT the same as a margarine container lid, even if they look the same. How do I know this? Well, here is my story.

We live in a very hoity-toity county. Sure, it might look like just farm country. A lot of the houses might seem a little worse for wear. But we are very picky about what plastic we recycle. We recycle only those numbered 1 and 2.

In case you did not know, your plastics are numbered. On the bottom of most containers, there is a number, usually from 1 to 5. I suppose 1 is the best, since anything with a number of 3 or more just is not high-class enough for us to recycle.

What's Cookin' - Warm Chicken Salad with Orange Sesame Dressing

(NC)-Serves 4

6 cups mixed salad greens

1/2 red pepper; cut into strips

1/2 small red onion, sliced

1/2 lb Maple Lodge Farms Premium Rotisserie Seasoned

Chicken Breast cut into strips

1 tbsp olive oil

1 cup bean sprouts

Dressing

juice of 1 orange

1/2 tsp grated orange rind

2 tbsp sesame oil

1 tsp dijon mustard

freshly ground pepper, to taste

Method

1. Combine dressing ingredients; set aside.

2. Divide greens among 4 individual serving plates.

3. Top with red pepper and onion slices.

4. In a skillet, stir fry premium rotisserie seasoned chicken breast in olive oil until lightly browned.

5. Whisk dressing and add to pan; heat for 30 seconds.

The barista is the Italian word for the skilled person who prepares coffee (ultimately espresso) in a coffee house.

What would you want your barista to be like?

This is not a trick question. The more I think of it, the more I believe it, that the world of coffee making must be laying on the shoulders of a barista.

I believe that because the coffee I am beeing served in a coffee house, I expect it to be good. On the other hand, the manager of the bar expects me to be pleased with the service and come again. If the coffee is not good, I will not do that.

Now who is responsible for this small gearing to work? You probably have guessed it, the barista.
