Burgers in Foil

1 Package 1 ½ lb ground beef
4 16-inch squares aluminum foil
4 Carrots, sliced
1 Can potatoes 16 oz, sliced
2 Green bell pepper, chopped
Dehydrated onion flakes
Worchester sauce
Salt and pepper to taste

Separate meat onto four portions. Place each in the center of a square of aluminum foil.

Top with equal portions of chopped carrots, potatoes and peppers. Season with dehydrated onions, Worchester sauce and salt and pepper to taste. Seal foil, checking for leaks. Place on hot coals for 10 to 15 minutes per side.

Yield 4 servings






Digging Up Earthnuts (Conopodium Majus)

The custom of grubbing for Earthnuts, or Pignuts is as ancient as mankind itself. Although these tasty tubers are beloved of pigs (hence the name) they are a most unusual and rewarding woodland snack and there was a time when they were a popular nibble for country children on their way to and from school.

The fern like leaves appear along with the Lesser Celandine in the spring. During May and July they develop umbellifer heads with white flowers not unlike Cow Parsley. According to Gerard and others the Dutch once ate them 'boiled and buttered, as we do parseneps and carrots'. Unearthing a pignut is a delicate operation. The Wine and Green Mushroom Caper

We were really looking forward to our visit with Andy and Gwen. Old college buddies, while I chose the medical profession, Andy chose sales. After a few years, Andy joined a wine distributor and eventually evolved into a master vintner. He is semi retired now, but as we reached his villa on a high hill in Napa, California, all we could see was grape vines twisting gracefully along rows fading off into the horizon. He certainly still had his hand in it.

We visited all morning while downing several glasses of a variety of wines that Andy had produced and tinkered with.

Low-Carb Dieting During Pregnancy May Benefit Your Baby!

As low-carb dieters change there eating habits, it is likely that these habits will stay with them. There is no surprise then that more and more pregnant woman are trying to maintain there low-carb routine during the months of pregnancy. There are new studies being done on low-carb dieting that point to the fat that there may be benefits in the long run for children of low-carb dieting.

Scientists from the Southampton School of Medicine have used mice to study the benefits of low-carb diets during gestation. It was found that pups born to mice fed a high-unsaturated protein and fat diet and low In carbohydrates were more likely to have low liver triglyceride levels that the pups born to mice fed a standard diet which was high-carb and low-fat.
