Baked French Toast

8 slices bread
12 ounces evaporated skim milk
4 eggs
1/4 cup brown sugar
1 teaspoon vanilla extract
3/4 teaspoon ground cinnamon

Lightly coat 9"x13"x2" pan with non-stick vegetable spray. Arrange bread slices in bottom of pan. Combine all remaining ingredients and mix well, using whisk or egg beater. Pour mixture evenly over bread. Cover tightly and refrigerate several hours or overnight. To bake, preheat oven to 350.

Remove bread from refrigerator and spray lightly with non-stick vegetable spray. Bake 30-35 minutes, until lightly browned. Serve with hot maple syrup, powdered sugar, and cinnamon. Sylvia's notes: this worked fine, came out reasonably crisp on the outside and reasonably soggy on the inside.

Definitely a fine lower-fat alternative to the traditional fried french toast.






Brownies and Glaze

(NC)—This recipe was prepared by Camelback and Central, 1403 2nd Avenue, New York, New York.

3/4 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

6 tablespoons sweet butter

3 ounces baking chocolate

3/4 cup sugar

2 eggs

1 cup chopped pecans or walnuts

1 teaspoon vanilla

2 ounces Jack Daniel's Whiskey

Jack Daniel's Glaze

Mix together flour, baking powder and salt; set aside. Melt butter and chocolate in top of double boiler over simmering water. Remove from heat; add sugar, eggs, nuts, vanilla, flour mixture and Jack Daniel's Whiskey; mix well. Preheat oven to 350ºC. Pour batter into a greased 8x10-inch cake pan. Tasty Rice Pudding by Kenia Morales

1 cup - uncooked rice 1 teaspoon - vanilla a pinch of salt ( if desire) 3 sticks - cinnamon 1/3 cup - sugar 2 1/2 cups water 12 0z. - evaporated milk

Bring water to boil for at least 7 minutes with cinnamon sticks, stir in rice. When rice tenders completely stir in evaporated milk, sugar, salt and vanilla.

Cover and let it simmer for 10 minutes. It makes up to 4 servings. It can be serve hot or cold.

Coffee and Health

Coffee and health used to be a controversed theme in the seventies. Nowadays, moderate coffee consumption is rather exonerated from its supposed negative long term effects upon health.

My mother used to be one of those persons who teaches her offspring, in its early ages, that coffee is not bad. It is bad bad bad! In consequence, I managed to keep away from coffee. At least untill the difficult age of 10, when, as I remember, I was permitted to join mother and neighbour-friends at the coffee-tattle table.
