Basic Cornmeal Biscuit

2 cups cornmeal -- any color
1 1/2 cups flour
1/4 teaspoon salt
1 tablespoon sugar
1 pinch cayenne pepper
2 teaspoons baking powder
1 teaspoon baking soda
4 tablespoons butter
1 egg -- lightly beaten
1 1/4 cups buttermilk
1 spray shortening

Preheat oven to 425~. In a food processor or large bowl, mix 1 1/2 cups of the cornmeal with the flour, salt, sugar, cayenne pepper, baking powder and baking soda.

Cut the butter into the dry ingredients until the whole mixture is the texture of cornmeal. Separately mix the egg with the buttermilk, and stir all but 2 tbsp. of this liquid into the dry mixture.

Mix just enough to make a uniformly moistened dough. Dust a clean board with half the remaining cornmeal, and turn the dough out onto the floured surface.

Sprinkle the top with the remaining cornmeal, and with flowered hands, gently push the dough into a circle about a 1/2" thick. Cut with a 2" or 3" biscuit cutter, and place biscuits close together on a greased cookie sheet. Brush top of the biscuits with the reserved buttermilk egg mixture.Bake in the preheated oven until puffed and brown, about 12 minutes.

Cool for a few minutes before serving.Yields about 1 dozen biscuits.

Chilean Wine History and Style

by Tynan Szvetecz

The Buddhists say that life is suffering. The capitalists say that life is a struggle. The communists say that life is a team-effort. But the Chileans say that life is beautiful. Why? Because sometimes you are just born with a full deck of cards. Chile is perhaps the only wine making country on Earth that seems to have everything exactly where it wants it.

Spanning a formidable length of 2,700 miles, Chile is the poster child for geographic isolation. With the frigid Antarctic ice off its southern border, a desert off the northern one, and its heart squeezed between the Pacific Ocean on the western border and the epic Andes on the eastern border, it is quite literally a cradle for the choicest wine growing conditions on the planet.

A Sweet Slice Of Summer

by News Canada

As the days grow longer, peaches, plums and nectarines are ripe for the picking – and a must-have for summer meals

(NC)—REEDLEY, Calif. — As Mother Nature turns up the heat, peaches, plums and nectarines will begin arriving in abundance at the local supermarkets and fruit stands. Like hot days and balmy nights, these delicious summer fruits begin arriving in late spring and disappear with the first hints of autumn.

There's nothing quite like biting into a juicy, fragrant peach or a plump, flavorful plum at the peak of ripeness. Perfect in a lunch bag or as an afternoon pick-me-up, peaches, plums and nectarines are the ultimate healthful summertime treat.

What's more, of course, is they're just as great in recipes as they are eaten fresh. A Sweet Slice Of Summer Recipe

Coffee …Most Popular Beverage Of All Time

by Mary Chambers

Long ago it is said that a lone shepherd and his flock came across a strange and mysterious plant growing upon a secluded and forgotten hillside. Before he could stop them some of his herd had began to gnaw away at this unusual berry. After about fifteen minutes or so the herder started to notice that his sheep were behaving in an odd manner. Not only were they unusually alert but they also appeared to be extremely hyperactive. Now being a little weary and extremely tired the shepherd decided to try the berries and see if the end results would be the same for him as they had been for his flock. To his pleasant surprise the shepherd began to feel wide awake and he too became very alert. After a few hours had passed along came a wandering monk who, Coffee …Most Popular Beverage Of All Time Recipe
