Ella's Vegetable & Meat Egg Rolls

1 pound ground beef
3 stalks celery -- chopped
5 green onions -- chopped
1 can bean sprouts -- washed and drained
1 can waterchestnuts -- chopped
2 tablespoons oil
1 teaspoon salt
2 tablespoons sugar
1/4 cup soy sauce
2 teaspoons cornstarch
1 tablespoon cold water
7 egg roll wrappers -- cut in half

Fry ground beef, drain, set aside for now. Heat wok, add oil, heat until hot, but not smoking, put celery, onions, bean sprouts and waterchestnuts. fry 2 minutes. Add salt, sugar, and soy sauce, cook 1 minute more.

Add ground beef and mix well. Mix cornstarch and water well. Add to mixture in wok. set aside and cool. When cool add to egg roll wrappers, wrapping diagonally then fry in deep fat for 3 to 5 minutes. Serve with a mixture of mustard and ketchup. Did egg rolls in this.

Use 7 egg roll wrappers and cut in half and this will make 15 egg rolls.

School Lunches the Frugal Way!

It seems that school starts earlier every year. So it's time to start thinking about what to put in those school lunches every morning.

My children always wanted to bring their own lunches because they didn't really like what was offered in the school lunchroom. But it was sometimes a little difficult to make their lunches nutritious and tasty and also to put a little variety in their lunchboxes without spending a small fortune.

If we let ourselves, we can spend a "lot" on individual servings, lunchables, and treats for lunches. Here are a few ideas to help you meet the "Frugal Lunchbox Challenge".

What's Cookin' - Warm Chicken Salad with Orange Sesame Dressing

(NC)-Serves 4

6 cups mixed salad greens

1/2 red pepper; cut into strips

1/2 small red onion, sliced

1/2 lb Maple Lodge Farms Premium Rotisserie Seasoned

Chicken Breast cut into strips

1 tbsp olive oil

1 cup bean sprouts

Dressing

juice of 1 orange

1/2 tsp grated orange rind

2 tbsp sesame oil

1 tsp dijon mustard

freshly ground pepper, to taste

Method

1. Combine dressing ingredients; set aside.

2. Divide greens among 4 individual serving plates.

3. Top with red pepper and onion slices.

4. In a skillet, stir fry premium rotisserie seasoned chicken breast in olive oil until lightly browned.

5. Whisk dressing and add to pan; heat for 30 seconds.
