Perch With Black Bean Sauce

3 tablespoon oil
2 tablespoon minced gingerroot
1 clove garlic -- minced
1 small onion -- minced
1/2 cup chicken broth
1/4 cup sake or dry sherry wine
1 tablespoon soy sauce
1/2 teaspoon toasted sesame oil
1 tablespoon black bean sauce *******
2 teaspoon sugar
1 teaspoon cornstarch
2 tablespoon water -- optional
1 tablespoon butter -- optional
1 tablespoon flour
fresh ground white pepper
1/2 pound perch filets

******** Note: Black beans come whole or pureed and mixed with seasonings as a sauce.The sauce is what's called for.If only the beans are available,rinse in cold water and puree with a little chicken broth before using....

Heat 1 tbls.of the oil in pan.Add gingerroot,garlic,and onions,and saute over medium heat 5 minutes.Add chicken broth,sake,soy sauce,sesame oil,black bean sauce and sugar.Cook at low boil 5 minutes.Strain,discard- ing solids.Return sauce to pan.

Combine cornstarch in cup with 1 tablespoon black bean sauce mixture.Stir until smooth,then pour into pan.Cook sauce over low heat,stirring constantly until thickened,about 2 minutes.Taste.If too salty and thick (it should pour easily),stir in up to 2 tabls.water.Set aside.

Heat remaining 2 tabls.oil (or use 1 tbls.oil with 1 tabls.butter,iff desired) in large skillet.Mix the flour with the pepper to taste.






Making Hamburger Recipes is Easy and Fun

When I was a kid Wimpy from the old Popeye cartoon show was one of my favorite characters because he expressed a deep love and obsession with hamburgers on a bun. Wimpy was always looking for hamburgers and wasn’t happy unless his plate was piled high with steaming hot hamburgers.

Even though I could only eat one, I easily related to Wimpy’s love of hamburgers, especially cheeseburgers. As I grew up I discovered how easy it was to make a meal out of cooking hamburgers and putting them on a hamburger bun. Add a little ketchup or hamburger sauce and you’ve got yourself a quick lunch or dinner.

Holiday Dieting: A Sweet Way To Cheat!

If your diet is making you a humbug this season, there’s some good news. Turns out dark chocolate, that decadent confection, may actually be good for you!

Yes, recently conducted studies published in the American Journal of Clinical Nutrition have shown that a dose of dark chocolate will heed all sorts of healthy results. And with the holidays just around the corner, this news couldn’t have come at a better time.

So just for fun, I thought I’d conduct a mini-research project of my own and get the “skinny” on our friend dark chocolate. Cranberry Daiquiri Slush

2 cups (500 mL) Ocean Spray® Cranberry Cocktail

1/2 cup (125 mL) lemon juice

1/2 cup (125 mL) lime juice

1/2 cup (125 mL) sugar or to taste

1/3 cup (75 mL) rum

Combine all ingredients in an 8-inch (20 cm) square non-metal pan; stir until sugar is dissolved. Cover and freeze 6 hours or overnight. To serve, scrape a fork over the surface of the frozen mixture and spoon a heaping cup (250 mL) into a 10 oz (300 mL) glass. Add a little more cranberry cocktail and stir to form slush. Makes 6 servings.
