Easy to Make Guacamole Dip by Jan Kovarik Easy to Make Guacamole! You can make guacamole that people will rave about! It’s easy, and you don’t need any fancy kitchen utensils or appliances. What You’ll Need To Have Ready Assemble the following kitchen items: Cutting board Sharp knife A shallow-lipped dish or bowl, preferably with a flat bottom A potato masher, hand-held is better than an electric whipper Ingredients (for one batch, feeds 2-4 people as a side dish or dip for chips):
2 Haas avocados*
Fresh cilantro (usually comes in a small bunch or plastic bag in the produce area)
2 Roma tomatoes
2 fresh limes (not lime juice)
Sour Cream (fat-free is OK)
1 package of Guacamole seasoning (Schilling, McCormick, or La 1 onion 1 yellow pepper 1 red pepper 1 eggplant 1 zucchini 6 green onions 12 asparagus 12 cherry tomatoes 6 tbsp Maille Balsamic Vinegar of Modena 4 tbsp olive oil 1 tbsp Maille A l'Ancienne (wholegrain) Mustard 1 tbsp fresh oregano, chopped 1 cup goat cheese, cut into small pieces Salt and black pepper (to taste) Peel onion and cut into slices. Wash and cut other vegetables into slices or wedges. For marinade, whisk Maille Balsamic Vinegar of Modena, olive oil, Maille A l'Ancienne Mustard and oregano to blend; season with salt and pepper. Put vegetables in large bowl and add marinade. Set aside for 30 minutes, mixing often. Start barbecue and roast vegetables to desired degree of doneness. 1/2 cup 125 mL butter or margarine 3/4 cup 175 mL BACARDI White, Gold or "1873" rum 3/4 cup 175 mL ketchup 1/2 cup 125 mL orange juice 1/3 cup 75 mL honey 1/4 cup 60 mL fresh lemon juice 1 tbsp 15 mL chopped garlic 1/2 tsp 2 mL salt 1/4 tsp 1 mL pepper 1/8 tsp 0.5 mL cayenne BACARDI BBQ Sauce for Chicken and Ribs (NC)—In saucepan, over medium-high heat, melt butter. Stir in BACARDI rum, ketchup, orange juice, honey, lemon juice, garlic and seasonings. Cook, stirring occasionally, about 40 minutes or until thickened. Yield: about 1 cup (250 mL). Chicken: Cut a 3 lb (1.4 kg) chicken into serving size pieces. Brush sauce on chicken during last 10 minutes of grilling, turning and brushing frequently.
