Bolivia − Palta Rellenos

4 oz. shrimp - peeled, cooked
2 avocados
1/2 banana
2 teaspoons lemon juice
1/4 cup mayonnaise
1 tablespoon half & half
salt and black pepper
1 pinch paprika
1 pinch sugar
1 1/2 cups chicken - cooked, diced
6 lettuce leaves - shredded

If using frozen shrimp, thaw completely. Cut avocados in half; remove stones. Use a melon baller to remove flesh from avocado skins. Reserve skins and 4 avocado balls. Dice remaining avocado flesh.

Slice banana. Combine diced avocado and banana. Sprinkle with lemon juice. Combine mayonnaise, half & half, salt, sugar, pepper, and paprika. Fold in banana mixture, chicken and lettuce. Spoon mixture over reserved avocado skins. Top with shrimp and avocado balls.

Hosting a Wine Tasting Party

As your love and knowledge of wine grows, it is inevitable that you will want to share your revelations with friends and family. Hosting a wine tasting party is a great way to do this.

When planning a wine tasting party, some obvious questions about parameters arise. How many people should you invite? What types and how many wines should you pour?

It is my opinion that an informal gathering should be kept to 12 people or less. This ensures that conversation and dialogue will be much more conducive than with a larger group.

Blind tasting is the most fun and informative. Wrapping bottles in bags will negate past preferences and prejudices. You may be surprised what you "like" without access to the wine label.

Folks, this week’s column is the beginning of a pilgrimage for me...

I mean it, this week’s column is the beginning of a truly personal pilgrimage for me, one of truly deep meaning, one of truly great emotion, and I’m not going to rest until I truly achieve what I‘m about to lay out for y‘all in the next few paragraphs.

Is that not a truly inspiring beginning for a column? Why, truly it is (okay, I‘ll stop). And, with that, let’s get right down to the nitty gritty. Those of you out there who read my stuff know that I love food. I’m a big eater, and I make no bones about it.
