Skillet Chicken and Rice

This chicken recipe is easily made in a skillet with rice, sliced carrots, and other ingredients. Scroll down the page for related chicken recipes, including chicken and rice casseroles.

* 2 to 3 pounds chicken pieces, skinned
* 2 carrots; peeled, sliced 1/2"
* 1/2 cup onion -- chopped
* 1 teaspoon bouillon, chicken, granules
* 3 cups mushrooms, fresh, sliced
* 3/4 cup rice, long grain
* 1 teaspoon poultry seasoning
* 1/4 teaspoon salt

Spray a 12-inch skillet with non stick coating. Brown chicken pieces on all sides over medium heat - about 15 minutes; remove and set aside. Drain fat from skillet, if necessary. Add mushrooms, carrots, rice, onion, bouillon, poultry seasoning, 2 cups water, salt. Place chicken atop rice mixture. Cover; simmer 30 minutes or till chicken and rice are done.

This chicken recipe serves 4.





Ratin' Fast Food

Sometimes I get the strangest emails. A couple of days ago, I had a woman write and ask me if I’d consider writing some restaurant reviews. She said she felt that most restaurant critics are highbrow types, and that it’d be a nice change if “a regular person” wrote some reviews. She then went on to suggest that I should start with the fast food chains first, then write about more locally based restaurants later.

Hmmmmm. Her idea is intriguing, but, to be honest, I genuinely wonder if ya’ll will give two flips as to what my opinions are regarding some of the fast food chains. Folks, this week’s column is the beginning of a pilgrimage for me...

I mean it, this week’s column is the beginning of a truly personal pilgrimage for me, one of truly deep meaning, one of truly great emotion, and I’m not going to rest until I truly achieve what I‘m about to lay out for y‘all in the next few paragraphs.

Is that not a truly inspiring beginning for a column? Why, truly it is (okay, I‘ll stop). And, with that, let’s get right down to the nitty gritty. Those of you out there who read my stuff know that I love food. I’m a big eater, and I make no bones about it. Cool Snacks for a Hot Summer

Beat the heat with these cool summer treats!

Mouse Popsicles

It’s not what you’re thinking! The name refers to the size of the popsicle—not the contents. Wash a bowl of seedless grapes, and then set the grapes in the freezer for about an hour. Poke colored toothpicks into the grapes to serve.

Juice Pops

Summer isn’t complete without homemade juice popsicles. Simply fill a popsicle mold or an ice tray with your favorite fruit juice. Cover the ice tray with clear plastic wrap and poke a toothpick through the plastic into each square. Place the tray into the freezer until the popsicles are frozen solid.
