Blueberry Streusel Muffins

1/4 cup all-purpose flour
2 tablespoons packed brown sugar
2 tablespoons firm margarine or butter
1/4 teaspoon ground cinnamon
Shortening
1 cup milk
1/4 cup vegetable oil
1/2 teaspoon vanilla
1 large egg
2 cups all-purpose flour OR 2 cups whole wheat flour
1/3 cup granulated sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh or drained canned blueberries OR 3/4 cup frozen blueberries -- thawed and well drained

Heat oven to 400º.

For topping, mix in small bowl with fork until crumbly, then set aside:
  1/4 cup all-purpose flour
  2 tablespoons packed brown sugar
  2 tablespoons firm margarine or butter
  1/4 teaspoon ground cinnamon
 
Grease bottoms only of 12 medium muffin cups with (or line muffin cups with paper baking cups):
  Shortening
 
Beat in medium bowl with fork:
  1 cup milk
  1/4 cup vegetable oil
  1/2 teaspoon vanilla
  1 large egg
 
Stir into milk mixture just until all the flour is wet (do not stir too much-batter will be lumpy):
  2 cups all-purpose or whole wheat flour
  1/3 cup granulated sugar
  3 teaspoons baking powder
  1/2 teaspoon salt

Gently stir in:
  1 cup fresh or drained canned blueberries or 3/4 cup frozen blueberries, thawed and well drained
 
Spoon batter into muffin cups until 2/3 full. Sprinkle each with about 2 teaspoons of topping mixture.

Bake 20 to 25 minutes or until golden brown. Adult help: Immediately remove muffins from pan to wire rack. Serve warm or cool.

If you think bottled water is safer than tap water, you need to read the following.

A Dutch study presented at a recent meeting of the American Society for Microbiology in Washington, DC. found that 40% of bottled water is contaminated with bacteria and or fungi.

Chemical or biological contamination of bottled water has been already found for many years. Some readers might already have known that some so called spring water is actually tap water without any purification. Many brands of bottled water are indeed inferior to tap water in regard to their safety.

Food Retailing or Food Entertainment?

Food retailing is going through a global revolution. On one side of the equation companies such as Walmart, Aldi and Liedl are gaining market share as local commodity food retailers.

Where does this leave the independent food retailer and does he have a future? If you ask Pete Luckett of Halifax, Nova Scotia in Canada, the answer is a definite yes. Coffee Roasting De-mystified

How many different names have you run across for different types of coffee roasts? Light, Medium, Dark? Espresso? Continental? Vienna, French, Italian, Spanish? City? Full-City? C'mon, who's thinking up these things?

Well, the dark secret (pardon the pun) of the coffee industry is that, well, there really isn't full agreement on which roast is which. So basically, we all pretty much get to hunt around, try different coffees from different sources and pick the one(s) we like. In this article, I'll try to use the standard nomenclature, and map it to the color and texture anyone can judge for himself.
