Blueberry-Lemon Loaf

1 cup plus 1 tablespoon water
1 1/2 teaspoons grated lemon peel
2 tablespoons margarine or butter -- softened
3 cups bread flour
2 tablespoons dry milk
3 tablespoons sugar
1 1/2 teaspoons salt
2 teaspoons bread machine yeast
1/3 cup dried blueberries OR 1/3 cup currants

Make 1 1/2-pound recipe for bread machines that use 3 cups flour, or make 1-pound recipe for bread machines that use 2 cups flour.

Measure carefully, placing all ingredients except blueberries in bread machine pan in the order recommended by the manufacturer. Add blueberries at the Raisin/ Nut signal or 5 to 10 minutes before last kneading cycle ends.

Select Sweet or Basic/White cycle. Use Medium or Light crust color. Remove baked bread from pan and cool on wire rack.

Favorite Desserts For A Diabetic Husband

It's easier than you think to create delicious desserts for your diabetic husband. When I had to get right down to it the ideas came flying at me out of my kitchen cupboard!

Here's a few of his favorites:

Easy Orange/Banana Parfait

1 pkge Lite Orange Jello (no sugar) 2 cups vanilla yogurt (fat free, no sugar but artificially sweetened) 1/2 tsp vanilla 2 tsp Splenda 1 banana 1/8 cup Lite cream cheese Makes 4 servings

Prepare the jello per the package directions. When it is partially set, slice and drop your banana pieces into the jello and mix gently so the banana pieces are covered by the jelly. Leave to set firm in the refrigerator.

Strawberry Rhubarb Coffee Cake

Bottom Layer: 1/2 cup butter or margarine 1 cup sugar 2 cups flour 1/2 teaspoon salt 1 teaspoon baking powder 1/4 cup milk 2 eggs 1 teaspoon vanilla

Cream shortening and sugar. Beat in eggs and stir in milk. Add dry ingredients. Mix until smooth. (Batter will be stiff.) Spread in the bottom of greased 9x13 pan.

Middle Layer: 4 to 5 cups of rhubarb (cut up) 2 eggs 1/4 cup milk 2 cups sugar 1 cup flour 1 three-ounce package strawberry Jello

Measure rhubarb into a mixing bowl. Stir in eggs, milk, sugar and flour. Spread over bottom layer. Sprinkle the dry strawberry Jello over the rhubarb mixture.

Top Layer: 1 cup flour 3/4 cup brow Strawberry Rhubarb Coffee Cake Recipe
