Cheese Straw Twists

2/3 cup grated Parmesan cheese
1 tablespoon paprika
1 (17 1/4 ounce) package frozen puff pastry -- thawed
1 egg -- slightly beaten

Heat oven to 425º. Line 2 cookie sheets with cooking parchment paper or heavy brown paper. Mix cheese and paprika. Roll 1 sheet of pastry into rectangle, 12 × 10 inches, on lightly floured surface with floured clothcovered rolling pin.

Brush pastry with egg. Sprinkle with 3 tablespoons of the cheese mixture. Press cheese mixture gently into pastry. Turn pastry over. Repeat with egg and cheese mixture. Fold pastry lengthwise in half.

Cut pastry crosswise into 1/2-inch strips. Unfold strips and roll each end in opposite directions to twist. Place twists on cookie sheet.

Bake 7 to 8 minutes or until puffed and golden brown. Repeat with remaining sheet of pastry, egg and cheese mixture. Remove from cookie sheet to wire rack. Serve warm or cool.






Honey Dijon Glazed Ribs

Makes 4 Servings

3-4 pounds pork back ribs

1 cooking onion (chopped)

1/4 cup Maille Red Wine Vinegar

1 stalk celery (chopped)

1 bay leaf

1 tsp. peppercorns

Maille Honey Dijon Mustard

Place ribs in a large pot and add onion, vinegar, celery, bay leaf, peppercorns and enough water to cover ribs. Bring ribs to a boil and then reduce heat to a simmer. Continue to simmer ribs for 45 minutes. Drain off liquid and remove the ribs. Start barbeque and when hot, start grilling ribs. Baste with Maille Honey Dijon mustard for 10-15 minutes and watch carefully to make sure the mustard does not get too scorched.
