Cheesy Breadsticks

1/4 cup grated Parmesan cheese
1/2 teaspoon paprika
2 cups all-purpose flour
1/2 cup shredded Cheddar cheese
3/4 cup milk
2 tablespoons margarine or butter -- melted
2 teaspoons baking powder
1 teaspoon sugar
1 teaspoon salt
1 egg -- beaten

Mix Parmesan cheese and paprika; reserve. Mix remaining ingredients except egg until dough leaves side of bowl. Turn dough onto lightly floured surface; gently roll in flour to coat. Knead lightly 20 to 25 times. Cover and let stand 15 minutes.

Heat oven to 400º. Grease 2 cookie sheets. Divide dough in half. Cover and reserve one-half of dough. Roll other half of dough into rectangle, 10 × 8 inches. Brush with half of the egg; sprinkle with half of the cheese mixture. Press cheese mixture lightly into dough. Cut rectangle lengthwise into 12 strips. Gently twist each strip several times; place on one of the cookie sheets.

Bake 12 to 15 minutes or until golden brown. Immediately remove from cookie sheet. Cool on wire rack. Repeat with remaining dough, egg and cheese mixture.

What is the advantage of these new half sugar and half synthetic baking sugars that are on the market? These drink products made with ½ the sugar carbs and ½ synthetic sweeteners and foods marketed and eaten by our kids, does it really give the consumer that much more of an advantage?

The Annual Life Cycle of California Vineyards

The annual life cycle of California Vineyards is generally considered to begin in the Fall immediately after the previous year's harvest. During this time, vines lose their leaves and begin to go dormant.

The vineyard manager's primary concerns are pruning the vines and ensuring that they are protected from cold temperatures. Nature helps with the second objective.

Sap from the vine drips towards the roots and creates a natural layer of insulation. Dirt can also be mounded around the roots for added protection.

Depending on the severity of the climate, vineyards are normally pruned sometime within three months after harvest. In very cold climates pruning is delayed to the end of this time frame.

Blended and Varietal Wines

Novice wine lovers soon come across the concept of blended and varietal wines. The two questions that spring to mind are, “what does it mean?” and “does it matter?”

At the basic level, the difference is quite simple. Varietal wines are made from a single grape variety, while blended wines are made using two or more. The most obvious example is the difference between the two great red wine styles of France. Burgundy red wine is composed of the single variety Pinot noir. Bordeaux red wines are most often blends of up to five varieties, Cabernet sauvignon, Cabernet franc, Merlot, Malbec and Petit verdot. There are a few Bordeaux wines made from a single variety, but they are the exceptions that prove the rule.
