Cheesy Grits

2 cups milk
2 cups water
1 teaspoon salt
1/4 teaspoon pepper
1 cup hominy quick grits
1 1/2 cups shredded Cheddar cheese (6 ounces)
1/4 cup sliced green onions
2 eggs -- slightly beaten
1 tablespoon margarine or butter
1/4 teaspoon paprika

Heat oven to 350º. Grease 1 1/2-quart casserole. Heat milk, water, salt and pepper to boiling in 2-quart saucepan. Gradually add grits, stirring constantly; reduce heat. Simmer uncovered, stirring frequently, until thick, about 5 minutes. Stir in cheese and onions. Stir 1 cup of the hot mixture into eggs; stir into remaining hot mixture in saucepan.

Pour hot mixture into casserole. Dot with margarine; sprinkle with paprika. Bake uncovered until set, 35 to 40 minutes. Let stand 10 minutes.

History of the Mendocino County Wine Industry

The history of wine production in Mendocino dates back to the mid 19th century. The first Europeans to settle in the region were Russian hunters and trappers. They made their living selling seal and otter pelts.

The Gold Rush caused the population of the San Francisco Bay Area to expand dramatically. The local timber industry took off with the increase in demand for building supplies.

The first grapes were grown during 1850s by failed gold prospectors. The wine produced during this era had a mainly local customer base due to the isolation of the region.

In 1851, the Anderson Valley was discovered by accident. Italian immigrants planted vineyards on the sunny hillsides of the valley during the ensuing generation.

The quality of tea is controlled by the quality of the water. It was said in ancient China that water is the mother of tea.

There are three categories of water: best is water from a hill, average is water from the river, bottom is water from a well. The best water from a hill is on a hilltop; the best water from a river is in the middle of a river; the best water from a well is from a well which is frequently used.

It is not easy to get water from a hill. So water from a tap is the most common. There are two ways to make the best use of tap water when making tea. 1.
