"The knife I use the most"
The Pro S line is the best set I think you can buy and the 7 inch Santoku is the one I use the most. I am impressed by the feel and balance it has and it takes and keeps a very sharp edge which is most important. You get what you pay for and with the Pro S Santoku you can't go wrong.

"Wrong Knife Shipped"
As one reviewer states, Amazon is shipping the WRONG knife. I received my Henckels knife today and it is NOT the Twin Pro S-inch. The knife is going back.

"Well worth every penny!"
I have the Henckels Pro S hollow-ground santoku, and it's definitely the best item in my kitchen. I've had it over a year and it just now needs to be professionally sharpened (of course, we do keep up with the sharpening steel every few uses). It slices through everything like it's warm butter, and items fall away from the sides. It feels solid and well-balanced in my hand, and the weight helps the slicing. The only caution I would share is that if you hold the knife properly (thumb and side of the index finger on the sides of the blade, last three fingers wrapped around the handle), be careful of the "dull" bolster area; I actually cut myself on this part of the knife the first time I used it! I used my steel to file down the sharp edges and haven't had any problems since. Overall, this was the best $80 I've ever invested in my culinary education!

"Excellent knife but buy it someplace else"
You can get the same knife for $89.99 at Bed Bath and Beyond. But if you have a 20% coupon, it only costs you $72.00. I hope everyone knows that BB&B always mails out 20% coupons and they DO NOT expire even though they have an expiration date on them..

"Excellent kniffe"
Unlike some reviewers, I did get the Pro S knife. It is an excellent knife. Good balance, feels good in the hand, very sharp and chops wallnuts as good as anything I have used. I would highley recommend this knife to anyone who appreciates good equipment in the kitchen!

"My wife's favorite knife", This has fast become my wife's most used and favorite knife. This was part of a replacement set I bought for her and it has really done the job. The knife is well balanced, the blade is extremely sharp and cuts through stuff with little effort. The hollow edge really makes a huge difference in how it cuts as it slices through stuff like it was going through warm butter. This is one of those knives that is a must have for anybody doing much work in the kitchen. Since we got this and the other Henckels knives her old set has quickly disappeared and is no longer used. Absolutely great knife!

"worth the price", i've owned this knife for more than two years and have never taken it to get professionally sharpened. i do use a sharpening steel but that's about it. love it! i will never go back to cheap knives again.

"Fabulous knife", This is a great knife! Bought it as a gift, but when it came wanted to keep it for myself!! The traditional nice style of the Pro S model. Good handle, well balanced. Nice quality steel. Great addition to your knife collection. Worth the extra bucks.

"I too was sent the lesser knife", I too was sent the wrong version of the knife and in my case they would not replace it with the correct Twin, so I got a refund (still to arrive-show up on my credit card bill). It was just a waste of time and a dissappointment dealing with Warehouse Deals...

"Razor sharp thin blade", This knife is made of thin blade. It is sharp but needs sharpening every week or so. I love the shape; it allows you to chop, dice, and mince. Vegetables can be sliced extremely thin.

Read this reviews before You buy...

"You get the cheapo inported verson from Amazon.", Cristina Vaamonde has reviewed other cheap imported Chinese knockoffs of brand name products here on Amazon.
Just be aware that for the price you get the import version.
This is one product you should buy at a department store so you get to look and feel the product.

"Incredible Knife!", Just purchased this as another step towards the Pro S set I am building. I must say that I was extremely impressed with the ease this knife chops, cubes and dices. It is RAZOR sharp out of the box, and has the nice santoku shape.

I can forsee this knife being the most used out of the entire set - very versatile and easy to use.

Can't speak for longevity, but it is very well built, and I see nothing preventing this knife from lasting 40+ years.

Great job on this one, Henckels!

"BEWARE!! BAIT AND SWITCH!!", I can't review this knife because I didn't receive it from Amazon. They sent me the "Henckel's International Forged Pro" version, not the "Henckels Pro S" they advertise!
The Forged Pro, Model # 10227-181 is lightweight and made in China. The real thing is model number 31120-183, made in Germany.
Amazon didn't acknowledge that they made a mistake, therefore I am returning the wrong knife and buying the right one elsewhere.
I am not the only one who has been duped -- read the reviews and be careful!

"Great knife--if you get the right one!", Amazon is still pulling their substitution scam--they sent me the $40 version until I complained and asked for the correct one. Make sure you get the one that says Pro S on the blade! The knife itself is great. I haven't used it a lot yet, but I have always been happy with my Pro S set of knives and it seems to be of just as high quality.

"Rating Amazon service, not the knife", Buyer beware!

As noted in other reviews, Amazon hasn't quite figured out what a Pro S series knife looks like. Instead, they sent to me a cheap Henkels International knife. Make sure they send you the correct knife!
