"Nice double boiler", I agree with the other reviewer: expensive but good.

I have made bernaise sause with ease as well as chocolate mousse using this pan.

One thing I think you will like is that the ceramic insert is easy to clean, even with melted chocolate on it.

"Best tool for bearnaise sauce", Expensive? Yes. Worth every dollar? Yes! The difference in making a sauce in this PORCELAIN insert double boiler and just a metal one is incredible. The keys are that the insert is not in the water and that it is made of heavy porcelain which is gentle on the sauce. No more mediocre bearnaise in this house! An added bonus is that it looks great.
