"Best kept secret for paring", My husband had a curved paring knife in his kitchen from before I met him. (Why? I'll never know since he doesn't cook much.) Once I figured out that it was for peeling fruit, I couldn't live without it. The curved edge insures a larger paring surface and less wasted fruit. I liked this knife so much I bought another so that I'd always have one on hand. When my mother visited, she too loved it and insisted we go to the store to get one for her.
