"Average Knife Sharpener Over Priced"
The title say's it all, AVERAGE electric knife sharpener at OVER PRICE. I should have paid more attention to the other 3 star reviews of this product. I will KEEP this product only because my other electric sharpeners I have burned out and I don't have the time to research electric knife sharpeners. My advice to any one looking to purchase an electric knife sharpener is go to any discount store and buy any one of the many available off the shelf. Maybe someday soon a LASER sharpener will become available for home use.

"Scratched my expensive knife!"
After reading the glowing comments from Cook's Illustrated about this model, as well as the great reviews at Amazon, I was certain that I'd ordered the best electric sharpener on the market. But after only two strokes in the #1 slot, it made several long scratches on both sides of my 8" Wusthof Chef's Knife running from heel to tip.

Although the scratches are only cosmetic, I find it completely unacceptable that the only way it can sharpen is to simultaneously scratch up the sides of your knife as you're drawing it through the machine. I ordered a new knife (cost, $110.00) to replace the one that got scratched. Thanks a lot Chef's Choice!




"Somewhat of a love hate relationship. "
I'll put my conclusions first so you don't have to read through my ramblings.
The Good:
Small size
Looks nice, well built and professional.
Quiet
Will easily put a good edge on a good knife that's not too dull.

The not so good:
Required quite a bit of experimentation to get the advertised results.
The best results I've been able to achieve are somewhat sloppy and inconsistent.

The Bad:
The instruction booklet.
Despite its well made appearance, I really wouldn't expect this to last very long if subjected to heavy use like in a restaurant or as the guy in the neighborhood who sharpens everyone's knives. The motor heats up rather quickly and on several occasions, under the required pressure to produce the "burr", bound up and stopped.
After getting a good edge on the first wheel, the edge shaved pieces off the stropping discs. I expect these to fail relatively quickly.
The steel in the second slot is not installed very well and rotates when used.

I'm still waffling on whether I really like this thing or not.
I read all the reviews an discounted the few negative ones as people who just didn't use it right.
My initial impression was one of profound disappointment. The box arrived somewhat mangled, though well in advance of the proposed shipping date. shipping was free, which was nice. The price I paid was considerably under what it shows today.
Upon unpacking, I liked the fact that it's smaller than I expected, and looks like a well made piece of equipment. I carefully read the directions, which as most reviewers stated, left a lot to be desired.
I correctly guessed that this was going to take a bit of trial and error, so I started out on an old, bowling ball dull chef's knife made of cheap stainless that hasn't seen use in several years. I followed the directions as best I could and got less than mediocre results. The elusive "burr" simply refused to materialize. My interpretation of the directions led me to believe that the knife was to be held perpendicular to the floor (straight up and down. This didn't work. After MANY more attempts, I finally hit upon a method that seems to work. Basically, you must pin the knife against the outside edge of the guide and draw the knife through with a slight "twisting pressure". Counterclockwise for the left guide, clockwise for the right. This required more pressure than I thought it would from the directions. The result was s good, sharp though somewhat "sloppy" edge. (I'm no knife expert, so I apologize for my weird terminology)
Once I figured out the action required, I moved on to other knives and got better and better results. Finally, on my relatively still sharp Henckels, I was able to put a pretty good edge.


"Good Sharpener"
I had used common sharpeners which come with can openers before. The quality of sharpening was not comparable to M130 and did not last at all. Chef's choice gives you shaving blade like quality and it lasts and it gives you a couple of really professional options on how you want to sharpen your knife. The only problem with the latter was my understanding of those options and I had to read instructions several times to really understand it. I have the sharpener for only a little more than a month and hope that it will preserve its sharpining qualities for a long time.

"Fantastic, Works Exactly As Advertized"
I'll keep it short. This knife sharpener is fantastic. It works exactly as advertised, is easy to use, and won't hurt your eardrums. It's a little large, so if you have a small kitchen you'll probably want to keep it in a closet or cabinet (but how often do you need to sharpen you knives anyway?). Other than that it is fantastic, and really does quickly and easily put a razor sharp edge on your knives. I even sharpened some of my old, cheap knives I was planning on tossing and it saved them for me!

The only negative (and the reason it was 4 stars and not 5) is that it is a bit on the expensive side! I might seriously consider the M110 and save a bit of money (I didn't think the M120 saved you enough to bother)... But, you often get what you pay for, and I couldn't be happier!

"Wonderful Product", I have owned a Chef's Choice knife sharpening system before but it was an old lesser model. It performed ok and made my knifes useable. I read a lot of reviews for this product and decided to get one for myself and I also sent one to a friend. I love to cook and I have a nice set of knifes that I was going to take out to have professionally sharpened. I got this system and was a little skeptical due to some of the negative reviews. I followed the directions and took my time with the sharpener. I was AMAZED with the results; it performed just as I hoped it might. I prefer a steeled edge so I followed the directions for a fine steeled edge using step one until I got a consistent burr on one edge. I then ran it through step two for 20 passes on each side and then did a very light and quick two passes through step 3. I got an amazingly good edge on my knifes and they cut through things so smoothly. This is a wonderful system but you have to take your time and pay attention to what you're doing. The biggest key is to let the system do the work and not force the blades through the steps. I will recommend this system to all of my friends and I will send one to my brother who owns a restaurant. This system makes a huge difference and for the person that likes to slice easily through food instead of sawing through it you will be pleased with the results.

"Wow, very sharp!", I sharpened my set of Henkels that are 6 years old. They couldn't cut your finger even if you tried.

Fast forward to the M130. Within 10 minutes, all my knives were sharpened. I opened up our brand new Global knife from Williams-Sonoma that we got as a wedding gift to compare.

I cut several oranges with the global knife and then with the Henkel's chef's knife. The difference is so minimal that you would hardly be able to tell unless you were doing an A/B comparison.

The $150 is a lot better than buying a new set of knives. Great thing is, I'm planning on helping my parents and in-laws sharpen theirs as well. Gots to get my $$'s worth!

"nearly excellent", Performance is much improved over previous Chef's Choice models. Following initial use, it did not appear to sharpen serrated knives well - minimal increase in sharpness,if any. Otherwise, provided a rather rapid, foolproof means for maintaining sharp non-serrated knives.

"Carefull, you could easily cut yourself!", The warning that the "knives will be sharp so be carefull" should be an audio so when you open the box, it yells at you! The knives were sharpened
per instructions (a must read!)and within a few minutes, both my husband and I had cut ourselves! A little care and we are both cut free, but initially look out! This sharpener really does the job!

Read this reviews before You buy...

"Like having new knives ...", Better even. Most of my knives are now sharper than when they were taken out of their packaging. We bought this after I decided that I wanted some higher quality knives. My husband wanted to be able to keep the blades sharp after the investment in the knives. I would definitely recommend this product.

"NOT for professional people", it is okay for a simple chopping for a time or two. Not worth the money. Not anywhere close to professional sharping and I worked in restaurant. I am still are going back to my sharping stone which is still the best currently and last the longest.

"Make cooking fun with sharp knives", Sharp knives are very important to making cooking fun. This gadget helps me keep all my knives sharp and tuned. Cutting tomatoes should be a breeze!

"Excellent device", This product does quickly what no other device has done for me before. It truly sharpens knives to a fine honed edge in just a few seconds, with very little skill required and a short learning curve.
Purists will still want the kind of shape and edge that a stone will produce after many minutes of careful (and often unsuccessful in my hands) work. But this product has been well thought out, seems pretty sturdy and it works. Large thick blades may not fit well.

It allows you to get two types of edge. One is a smooth, finely honed edge that cuts very smoothly. I don't prefer that. The other is also a finely honed edge, but there is just enough irregularities on the edge to give a momentary sawing action as it starts to cut. I am not enough of an aficionado to have different knives with different types of edges. I prefer the "bite".

There are a couple of ways to know your knife is well honed. Look at the edge while holding the blade directly perpendicular to your line of vision. A well-honed edge will not reflect any light, because the edge is actually thinner than the wavelengths of visible light. The other way is to touch the edge to your thumbnail and try to pull it sideways (NOT in a cutting direction) across the nail. If it is dull, it will slide. If it sharp, it will "stick".

The Chef's Choice M130 achieves that level of sharpening in moments.

"Great sharpener", I bought the sharpening station because it was highly rated by cooks illustrated. It is a great piece of equipment, I have expensive knives and want to keep them sharp without damaging the blades, this did the job. My husband noticed immediately how sharp the knives were. I highly recommend it, I just read the instructions first and practiced using a cheap knife and the results were amazing.
