"Forschner 5" Mini Chef's Knife"
It's amazing how many knives I have bought and simply do not use. After working in a commercial kitchen for a while, I can tell you that nothing beats the Forschner brand of knife with the Fibrox handle. They are well balanced, easy to clean, and hold a very good edge. This 5" knife is one I use often. In fact, if I'm not using my 10" chef's knife, odds are this one is in my hand. If you are looking to create a great set of knives, this is a great place to start.

"Forschner knife"
I have used this knife for several weeks now and love it. I have a set of Chicago cutlery that I have problems keeping sharp - even with a ceramic sharpener and steel. The plastic handle of the Forschner is nice as I don't have to worry about soaking a wooden handle (like in the Chicago cutlery) in the dishwater too long. The wooden hangles tend to swell and discolor over time with too much water exposure. This knife is very sharp. My husband cut himself while preparing a meal. I have not had to sharpen it yet. I hope to find that it is easy to sharpen when needed and maintains its sharpness.

"Nice medium knife"
I don't like to use a big heavy and rigid chef's knife for most chopping tasks, so I always found myself using a paring knife with a little flex. Paring knives also have their limitations though, so I have been looking for a knife somewhere in between.

This little beauty fits the bill perfectly and has quickly become the workhorse of my knife collection. The handle is much more comfortable and grippy than a classic knife and the unusual shape of the blade allows both slicing and rocking chopping with equal ease.

A great 'in-between' knife.

"Great knife for the money.", Very light. Shape is a bit different from typical paring/chef's knife, but great for lots of all-around tasks. Good value. Not quite heavy enough to go through a carrot or similarly dense foods w/ease, but you can get used to it.

"Great knife, slightly small...", This is a great knife. It comes extremely sharp, it holds its edge well, and it sharpens very, very easily. It has a comfortable handle and it doesn't suffer from any discoloration during use.

In my opinion, 6" would be the perfect size - 5" is just a bit too small for regular cooking use, even though I generally prefer smaller knives generally (although this little guy makes a great steak knife).

"R H Forschner has the Best "Cheap" Knives", I have Knives from most all of the "Premium" makers From Mac to Wusthof.
Forschner is the best for the buck. The 5 inch chef's is perfect for small cutting jobs. It is a killer all purpose knife.

"Another hit from a fine manufacturer", I have three other Chef knives from this manufacturer and am happy with all. Cook's also has reviewed their larger Chef knife as top notch. I primarily use this particular knife for vegetable prep. I like the balance and the fibrox handle has a great feel. Additionally, the price is a fine value.

"A bit too short for all purpose", I bought this smaller blade version of the 8" Forschner Fibrox for our vacation home, thinking I wouldn't need the larger knife. Wrong. Although this knife is adequate for some smaller jobs, the 8" is much more versatile. If one had both knives, one would probably still reach for the 8" most of the time. Get that one instead, as recommended by America's Test Kitchen.
